Cupcakes here, cupcakes there, cupcakes everywhere !

Je n’ai jamais vu autant de cupcakes dans ma vie. Les uns plus beau que les autres. Des créations originales, des ‘mises en scène’ fantastiques, des parfums surprenants. 50 pâtissiers (plutôt pâtissières), professionnels ou amateur sont venus avec leurs cupcakes pour la première édition de Cup Cake Camp Paris. Organisé par Cat, de Little Miss Cupcake et Bryan, de Merce and the Muse, l’événement avait lieu dans le charmant Bistrot Vivienne. 

Depuis quelques semaines déjà je me préparais dans ma tête, dans les actes aussi, avec quelques essais de cupcakes. Et vendredi, samedi et dimanche j’ai vécu ‘cupcake’. Les courses à faire. Il en faut du beurre et des œufs pour les 80 cupcakes que je prévoyais de faire. Faire cuire les cupcakes, faire les glaçages sans oublier les décorations et la présentation.

Des rencontres virtuels sur twitter devenues réalité, des papotages sur des recettes, échanges des idées, ‘goutage’ de parfums inédit (pastèque-wasebi de Amarja du blog Frosted Envy pour en donner qu'un exemple), j’ai passé un dimanche après-midi parfait !

Et le bonus… mes cupcakes Pêches-Verveine-Mascarpone, ont obtenu le premier prix dans le concours pour ‘meilleur cupcake inspiré par l’été’ !

C’est bien pour ça que je vous donne la recette, en français et en anglais !

Cupcake aux pêches - verveine

Le cake
135 g de farine 
2 c.a.c. de levure chimique
25 g de poudre d’amandes
175 g de sucre
1 c.a.c. d’extrait de verveine
50 g de beurre ramolli
125 g de crème fraiche
2 œufs
5 pêches

La crème
300 gr de sucre glace
50 g de beurre ramolli
125 g de mascarpone

Préparer les pêches :
Peler les pêches et les couper en petits dés. Les mettre dans une casserole avec 2 c.a.s. de miel et 1 c.a.s. d’extrait de verveine. Faire ‘compoter’ sur feu doux. Laisser refroidir (de préférence toute une nuit)

Cuire le cake
Préchauffer le four à 170°C

Tamiser la farine, la levure et la poudre d’amande et ajouter une pincée de sel, le sucre et le beurre ramolli.

Mixer à vitesse lente jusqu'à on trouve un texture de sable. Ceci peut prendre 5 à 10 minutes.

Délayer la crème fraîche avec le premier œuf pour ensuite rajouter l'autre œuf. Mélanger-en la moitié au mélange de beurre. Rajouter l'autre moitié et mixer jusqu'à ce que la pâte soit bien lisse.

Mettre une cuillère de l’appareil dans les caissettes puis une toute petite cuillère de pêches avant de finir avec le reste de l’appareil. Ne pas remplir les moules plus de 2/3.

Faire cuire pendant 20-25 minutes. Laissez refroidir 5 minutes dans le moule avant de démouler et poursuivre le refroidissement sur une grille.

Faire le glaçage
Mixer le beurre et le sucre glace avant d’ajouter le mascarpone. Ajoutez 2 ou 3 c.a.s. du jus des pêches pour avoir un léger goût de pêches-verveine dans la crème.

Cupcake Peach- Verbena (Vervein) - Mascarpone Cream

The cake
135 g flour
2 tsp baking powder
25 g ground almond
Pinch of salt
150 g sugar
1 ½ tsp vervein extract
50 g soft butter
125 g cream (crème fraîche)
2 eggs
5 peaches

The mascarpone cream
300 g confectioner sugar
50 g butter
125 g mascarpone

Preparing the peaches
Peel the peaches and cut them in cubes. Put them in a saucepan with 2 tbsp of honey and 1 tsp vervein extract. Leave to simmer on low heath until peaches are soft and ‘syrupy’. Leave to cool (preferably overnight).

Making the cake
Preheat the oven at 170°C

Sift the flower, the baking powder and the ground almond and add the salt, the sugar and the butter.

Mix this at low speed until you obtain the structure of sand. This can take upto 5-10 minutes.

Beat the first of the eggs into the cream, then add the other one. Put half of it into the mixture and after full combined, add the other half. Mix until you get a smooth batter.

Put one spoonful of the batter in the cupcakes liners in your muffinpan. Add a spoonful of the cubes of peach before filling with the rest of the batter. Do not overfill.

Cook for about 20 minutes and leave to cool for 5 minutes in the pan before transferring to a gril to finish cooling your cakes.

Preparing the Mascarpone topping
Like any buttercream first of all mix the butter thoroughly until nice and fluffy. Add the confectioner sugar little by little, not forgetting to scrap the sides of your mixing bowl regularly. Then add the mascarpone.
I added 2 ou 3 tbsp of the peaches juices to obtain a slight peach-verbena taste in my cream.
